To make a summery chanterelle dish you will need:
For the potatoes:
- 1 kg of young potatoes;
- 30 g of butter;
- 2–3 tbsp chopped dill;
- salt to taste.
For the chanterelles:
- 400–500 g of chanterelles;
- 30 g of butter;
- 1 small onion;
- salt;
- freshly ground black pepper;
- sour cream (optional);
- additional dill.
Preparation:
Wash the potatoes well and boil them in salted water for 15–20 minutes until soft. Meanwhile, clean the chanterelles. Cut larger ones in half. Melt the butter in a pan and sauté the chopped onion for 2–3 minutes until soft. Add the chanterelles. Fry over medium heat for about 8–10 minutes until the liquid evaporates and the mushrooms lightly brown. Season with salt and pepper. Drain the water from the potatoes. Add butter and lightly mash each potato with a fork or potato masher so they break apart but do not crumble. Stir in the dill and, if needed, a little more salt. Place the mashed potatoes on plates and spread the butter-fried chanterelles on top. If you have it, stir 1 tablespoon of sour cream into the chanterelles at the end of cooking. The sauce will become creamier, and the dish will gain an even richer flavor.
