Perfectly suited for roasted meat, sandwiches, or simply as a crunchy snack, whose jar doesn’t stay long in the fridge.
Ingredients:
- 1 medium-sized cauliflower;
- 1 small regular or red onion, sliced into thin rings or half-rings;
- 1 red hot pepper, sliced into rings;
- 2 tsp. of regular or black mustard seeds;
- 1 cup of rice or white wine vinegar;
- 1.5 cups of water;
- 1 tbsp. of fine salt;
- 3 tbsp. of sugar.
Preparation:
1. Wash the cauliflower, dry it, and divide it into florets. Put them into a large bowl, then add the onions, hot pepper, and mustard seeds. Mix well by hand, then place into jars – the ingredients should almost fill them.
2. In a saucepan, mix the vinegar, water, salt, and sugar. Bring to a boil and let simmer on low heat until the sugar and salt dissolve.

3. Pour the hot marinade over the vegetables in the jar so that the liquid completely covers them. Close, let cool, then refrigerate. Taste no earlier than after a week.
