Ingredients (for 4 people)
- 1 kg firm boiling potatoes
- salt
- pepper
- nutmeg
- 50 g smoked bacon with lard
- 2 tbsp butter
- a little more butter for greasing the dish
- 2 tbsp flour, about 30 g
- 250 ml milk
- 100 g gouda cheese
- 1 bunch of spring onions
- 2 pears
Preparation
1. Peel the potatoes, wash them, and cook covered in salted water for about 20 minutes. Drain and let cool slightly.
2. Cut the bacon into strips and fry in a pan without additional fat until crispy. Remove.
3. Béchamel sauce. Melt 2 tbsp butter in the bacon fat. Add the flour and stir-fry briefly until the mixture is light. Pour in 250 ml water and milk, bring to a boil. Cook while stirring for about 5 minutes. Season the sauce with salt, pepper, and nutmeg.

4. Coarsely grate the cheese. Wash the spring onions and cut into thin rings. Peel the pears, cut into quarters, remove the cores, and slice thinly.
5. Preheat the oven to 175 °C, or if using a hot air mode – to 150 °C. Slice the potatoes, mix with spring onions, pears, and bacon. Put everything into a butter-greased baking dish. Pour the sauce over and sprinkle with grated cheese. Bake in the preheated oven for about 30 minutes.
