Classic tomato sauce: for pasta, pizzas, and other dishes

Ingredients:

  • 1 onion

  • 1 clove of garlic

  • 1 tbsp olive oil

  • 1 can, 850 ml, of whole peeled tomatoes or 1 kg fresh tomatoes

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Salt and pepper

  • Sugar

Preparation

1. Peel the onion and garlic, finely dice. Heat the oil in a large pot. Add the onion and garlic, sauté while stirring for about 5 minutes.

2. Add the tomatoes and crush or chop them with a spatula.

3. Bring to a boil and cook the uncovered sauce over low heat for about 30–40 minutes until it thickens slightly. Be careful – the sauce may splatter.

4. After about 20 minutes, rub the dried herbs between your fingers and add them to the sauce. Season with salt, pepper, and sugar to taste.

Tomato paste for an even more intense flavor

If you want a brighter, slightly roasted aroma, add 1 tbsp tomato paste and a pinch of brown sugar when frying the onion and garlic.

Stir everything and fry for 1–2 minutes until the tomato paste darkens slightly and the sugar caramelizes lightly. Only then add the tomatoes. This way the sauce will have a particularly rich and harmonious tomato flavor.

Tomato sauce from canned or fresh tomatoes?

When sun-ripened tomatoes reach their peak season or you can pick ripe fruits from your garden, it is worth making tomato sauce from fresh tomatoes. For a similar amount of sauce, instead of 850 ml canned tomatoes, you will need about 1 kg fresh tomatoes. They provide a particularly fresh aroma and, depending on the variety, can be slightly sweeter.

An even more intense tomato flavor can be obtained if the fruits are roasted in the oven beforehand. When preparing roasted tomato sauce, the tomatoes are roasted – this evaporates some of the water and the flavor becomes more concentrated.

What goes well with tomato sauce?

A good tomato sauce is a true basic recipe for many favorite dishes. Classically, it, of course, goes perfectly with spaghetti and other pasta. But it is also suitable for pizza, lasagna, casseroles, or as a base for skillet dishes, such as shakshuka.

The prepared tomato sauce can also be used as a base for Bolognese sauce – you just need to prepare it additionally with ground meat or a vegetarian alternative.

Depending on what you use the tomato sauce for, you can play with herbs and spices. Basil and oregano are perfect for pizza and pasta, while hot pepper, cumin, or paprika powder will give the sauce a spicier note suitable for skillet dishes.
