For the last summer evenings: stewed peppers and tomatoes

Ingredients:

  • 1 large onion, chopped
  • 2 cloves of garlic, chopped
  • 1 tablespoon fresh thyme, chopped
  • 6 tomatoes, quartered
  • 2 bell peppers, diced
  • 1 green sweet pepper, diced
  • 1 zucchini, diced
  • 1 cup smoked sausage (optional)
  • 1 cup tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon sweet paprika powder
  • 1 teaspoon smoked paprika powder
  • 1 tablespoon olive oil
  • salt and freshly ground pepper to taste.

Preparation:

Heat 1 tablespoon of olive oil in a cast iron pot or other heavy-bottomed pan. Add the chopped onion and cook for 3–4 minutes. Add the garlic and fresh thyme, cook for another 2 minutes. Add the tomato paste and diced sausage, cook for another 5 minutes. Add the peppers, zucchini, tomatoes, tomato sauce, sweet paprika, and smoked paprika powders. Cover and simmer until the vegetables are softened but still crisp, about 15–20 minutes. Season with salt and pepper. Serve with fresh bread or rice.
