Jolita Tamoševičienė, the chef of the “Iki” retail chain, notes that people are increasingly looking for alternatives to traditional flours, and gluten-free dishes are becoming not only a necessity for some people but also a conscious choice in everyday nutrition, according to the press release of this retail chain.
“Gluten is a group of proteins found in wheat, barley, and rye, which gives dough elasticity and fluffiness. People who do not tolerate it or have celiac disease avoid gluten. It is not necessary for everyone to do so, but experimenting in the kitchen and discovering new flavors is definitely worth it,” says chef Jolita Tamoševičienė.
According to her, more and more people are choosing simpler ingredients with clearer composition, and dishes like gnocchi allow you to easily adapt the recipe to individual needs. “It is a dish that does not require complicated products. Gluten-free Italian potato dumplings with chicken and sun-dried tomatoes
Ingredients needed: 500 g gluten-free potato dumplings, 2 chicken breasts, 1 handful of sun-dried tomatoes, 2 garlic cloves, 150 ml cream (soy cream can be used), 50 g hard cheese (optional), olive oil, Italian spices, salt, pepper.
Preparation:
Cook the potato dumplings according to the package instructions and set aside. Heat olive oil in a pan, add the chicken cut into pieces, and fry until nicely browned. Then add chopped garlic and sun-dried tomatoes, sauté briefly.
Pour in the cream, reduce the heat, and let the sauce simmer for a few minutes. Season with salt and pepper, Italian spices, and if desired, stir in grated cheese. Add the cooked potato dumplings to the sauce, gently mix, and serve immediately.
