How to make date paste:
- Remove the pits from the dates and soak them in hot water for 10 minutes.
- Blend the softened dates with an electric blender along with a few tablespoons of the soaking water until completely smooth.
- Replace the brown sugar in the recipe with the same amount (1:1 ratio) of this paste.
Why does it work? Dates provide rich sweetness and shine, but the sauce does not become flat – a deep molasses flavor is maintained.
Other simple ways to improve the sauce
- Balsamic vinegar for depth: apple cider vinegar gives a sharp tang, but replacing part of it with balsamic vinegar creates a more complex flavor profile. Instead of 1/4 cup apple cider vinegar use: 2 tbsp balsamic vinegar + 2 tbsp apple cider vinegar.
- Smoked paprika for smoky effect: If you roast the meat in the oven but want a smoky aroma, add 1/2 tsp smoked paprika to the sauce.
Classic homemade BBQ sauce recipe
Ingredients:
- 2 tbsp olive oil
- 1 small onion (finely chopped)
- 2 large garlic cloves
- 1 tbsp tomato paste
- 1 cup ketchup
- 1/4 cup molasses
- 1/4 cup apple cider vinegar
- 2 tbsp date paste (or brown sugar)
- Spices: 1 tbsp chili powder, 2 tsp Worcestershire sauce, 1 tsp dry mustard, 1/4 tsp cayenne pepper, a pinch of allspice, salt and pepper.
Preparation:
- Sauté the vegetables: heat oil in a pot over medium heat, add onion, salt, pepper and cook covered for about 5–6 minutes. Stir in garlic (1 min.) and tomato paste (2 min.).
- Combine flavors: pour in ketchup, molasses, vinegar, date paste, add all remaining spices and pour in 1/4 cup water.
- Thicken: simmer over low heat, stirring occasionally for 3–5 minutes until the sauce thickens. Remove from heat and let cool for at least 5 minutes.
- Finish: if you want a perfectly smooth and glossy sauce, blend it with an electric blender.
