Ingredients

  • 200 g soft butter
  • 130 g sugar
  • 4 large eggs
  • 50 ml mandarin juice
  • 1 mandarin
  • 2 mandarin peels
  • 200 g all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 12 mandarin slices for decoration

How to make?

  1. Line a baking dish with baking paper. Preheat the oven to 180 C.
  2. Peel one mandarin. Remove the skin and cut into small pieces. Set aside. Squeeze about 50 ml juice from the other mandarin.
  3. Mix the flour, salt, and baking powder. Set aside.
  4. Crack the eggs into a bowl and beat. Set aside.
  5. Beat the butter and sugar until creamy, light, and fluffy. Gradually pour in the beaten eggs and mix everything.
  6. Add the mandarin peel. Gradually add the flour mixture and gently mix.
  7. Pour the mandarin juice into the cake batter and mix. Add the chopped mandarin pieces and incorporate them into the batter.
  8. Pour the batter into the prepared baking dish. Decorate the top with mandarin slices.
  9. Bake the cake for 50–55 minutes until it turns golden brown and a skewer inserted comes out clean. Cool well after removing from the oven. Enjoy!
