  1. Sauté the vegetables: heat oil in a pot over medium heat, add onion, salt, pepper and cook covered for about 5–6 minutes. Stir in garlic (1 min.) and tomato paste (2 min.).
  2. Combine flavors: pour in ketchup, molasses, vinegar, date paste, add all remaining spices and pour in 1/4 cup water.
  3. Thicken: simmer over low heat, stirring occasionally for 3–5 minutes until the sauce thickens. Remove from heat and let cool for at least 5 minutes.
  4. Finish: if you want a perfectly smooth and glossy sauce, blend it with an electric blender.
