Why shouldn’t beets be peeled and cut?
The skin and root act as a natural protective “package.” They help preserve the juices, natural sugar, and betanin – the pigment that gives beets their rich color. If you peel or completely cut off the root before boiling, some of these substances will go into the water. The vegetable may become paler, watery, and lose some of its flavor.

Before boiling beets, it is enough to wash them well under running water, preferably scrubbing with a brush. Try not to damage the skin. If the root is very long, it can be slightly shortened, but it should not be cut off completely to the base.
Water temperature and acidity
Pour cold water over the beets so that the water covers them by about 2–3 centimeters. Place the pot on the heat, bring to a boil, then reduce the heat to low.
Boiling water vigorously can damage the vegetable’s flesh, so beets may become too soft and watery. It is better to cover the pot with a lid, but not completely sealed, so that steam can escape.
It is not recommended to add salt to the water – it can affect the texture and taste of the vegetable. However, a teaspoon of lemon juice or vinegar per liter of water can help preserve the bright color of the beets.
How long to cook?
Cooking time depends on the size of the beet:
small beets – about 30–40 minutes;
medium-sized – 40–60 minutes;
large, more than 8–10 cm in diameter – 60–90 minutes.
The most important thing is not to blindly follow the time but to check if the vegetable is cooked.
A faster way – in the microwave
When there is no time to wait long, beets can be cooked in the microwave.
Wash the beet and pierce it deeply in several places with a fork. This will help prevent it from bursting. Then put it in a baking bag and add a few tablespoons of water.
Cook for about 15 minutes at 800–1000 W power. After turning off the microwave, leave the beet inside for a few more minutes – it will finish heating from the remaining heat.

How to check if the beet is cooked?
A knife or fork should easily pierce the center of the vegetable. If resistance is felt, boil for another 5–7 minutes and check again.
It is important not to overcook the beet – overcooked it may start to crumble when cut.
Immediately transfer the cooked beet to cold water or put it in ice water. This will stop the cooking process and make peeling easier. The skin of a cooled beet often peels off almost without a knife.
Which beets take the longest to cook?
Harder, sweeter beets are denser, hold their shape better, and lose less color when cooked. However, due to their firmer flesh, they may require more time.
If beets have been stored for a long time and have started to lose moisture, their skin may become tougher, and the flesh less juicy. Fresh beets usually cook faster and taste better.
How to store cooked beets?
Cooked beets are best stored in the refrigerator in an airtight container or bag:
unpeeled and with skin – up to 5 days;
peeled – up to 3 days;
cut – best consumed within 2 days.
