„Grew out of“ the restaurant kitchen

“This journey brought us extraordinary experiences – we grew together, experimented, and achieved what we could only dream of – a Michelin star,” the chef wrote.
However, according to him, as the business grew, natural limits appeared.
“With ‘Demo Loft’ we had a very small kitchen – six square meters with equipment. Over all these years, in those six square meters, I can truly be proud of our achievements and what we have done,” said T. Eidukevičius.
According to the chef, initially the small space was not an obstacle, but over time, the growth of both the café and restaurant activities in the same premises changed the situation.
“As the flow grew, you realize you are limited by the size of the kitchen itself. The café and restaurant barely fit in one space,” he said.
T. Eidukevičius emphasized that the decision to part ways with “Demo Loft” was made by mutual agreement.
The café operating in the same premises alongside the restaurant will continue under its current owners Dalia and Andželika, while the chef and his team will create a new stage for the restaurant.
“The goal of ‘Demo Loft’ has always been to bring people together into a community. In my opinion, the café meets this need better and can grow more given the small kitchen limitations. And the restaurant, in my opinion, could also grow somewhere else,” said T. Eidukevičius.

The Michelin star stays with the restaurant
After the news about the changes, questions arose about the Michelin star – whether it would move with the chef to the new location.
T. Eidukevičius explained to 15min that Michelin awards are given to the restaurant, not to a specific head chef.
“I have my personal star, which was awarded to me back in 2023, that statuette. But all Michelin awards stay with the restaurant,” he said.
According to the chef, he is not very worried about this issue.
“We don’t work for the stars. Gastronomy can be an art form and haute cuisine has a future – there is no question about that,” said T. Eidukevičius.

Looking for a new restaurant in Vilnius
Currently, T. Eidukevičius and his team are looking for new premises for the restaurant. It is not yet clear whether the new project will keep the “Demo” name.

“Whether we call it the ‘Demo’ restaurant or not – I really don’t know. I think the premises themselves will dictate that,” said the chef.
He emphasized that he is not going into the new stage alone.
“A restaurant is its people and team. The name is a name, but the team really creates absolutely all the value and experience,” said T. Eidukevičius.
The chef said he is looking not only for a bigger kitchen but also a space that would help create a new experience for visitors.
“I want the premises not just to be an attraction, but to impose an impression by itself and give us the opportunity to create a truly impressive experience,” he said.
Continuing the “Uldu” project in Juodkrantė
At the same time, T. Eidukevičius continues to develop the “Uldu” restaurant in Juodkrantė. According to him, this project has received good visitor feedback.
“Uldu” is doing wonderfully. I can be proud of the whole team we managed to assemble. Guests are extremely happy and we are extremely happy that we appeared here at the right time and place,” said the chef.
He did not rule out the possibility that in the future “Uldu” will operate not only during the summer season.
Meanwhile, the “Demo Loft” restaurant in the capital’s T. Ševčenkos street is counting down its last two weeks.
In the last days, guests are invited to signature dinners, and on August 15–16 the restaurant will conclude this stage with a “Farmers table” format.
15min reported that one of the four Michelin-starred restaurants in Lithuania – the “Pas mus” restaurant operating on Pilies street in the capital – closed its doors this year.
The well-known chef Vita Bartininkaitė, who worked there, is already working in another Michelin-starred restaurant – “Nineteen18”, where she replaced chef Andrius Kubilius.
The “Demo” restaurant received its first Michelin star in 2024. It retained this recognition in subsequent years.
