The combination of pork and fruits is not new in world cuisines – pork with apples, pineapples, or plum sauce has long been considered a classic flavor combination. The reason is simple: pork meat has a mild, neutral taste that pairs perfectly with sweeter notes.

Pork belly is especially suitable for shashlik – due to its fat, it remains juicy even when grilled, and at the same time gives the dish a richer taste than leaner cuts of meat. That is why pork belly is often chosen when a more intense, aromatic shashlik is desired.

When marinating pork belly, it is worth adding elements of sweetness – honey, brown sugar, or fruit juice. This helps the meat caramelize nicely during cooking and further enhances its flavor.

Peach salsa – a refreshing summer accent

Salsa – a sauce of Mexican origin, traditionally made from tomatoes, onions, chili peppers, and herbs. However, fruit salsa is a popular summer variation that pairs perfectly with grilled dishes.

Peach salsa is prepared from fresh, ripe peaches, which are finely chopped and mixed with red onion, cilantro, chili pepper, and lemon juice. The result is a refreshing, slightly spicy sauce that contrasts with rich, smoky pork.

It is important to use ripe but still firm peaches – too soft will turn into mush, and too hard will not have that sweet aroma. Peaches can also be grilled slightly – this will give them an additional smoky flavor. We share a recipe suitable for Father’s Day – pork belly shashlik with peach salsa and grilled pineapple.

For pork belly shashlik with peach salsa and grilled pineapple, you will need:

  • 800 g dry-marinated pork belly shashlik
  • 1 pc. pineapple

For peach salsa:

  • 3 pcs. peaches
  • Red onion
  • Fresh cilantro, a handful
  • chili pepper (to taste)
  • 1 pc. lime juice
  • Salt, pepper
  • 1 tbsp. olive oil

Preparation. Prepare the salsa: cut the peaches into small cubes, mix with chopped onions, cilantro, chili pepper, lime juice, salt, and olive oil. Leave in the refrigerator for the flavors to meld.

Peel the pineapple and cut it into rings about 2 cm thick. Thread the marinated meat onto skewers. Heat the grill well. Grill the shashlik over medium heat for about 12–15 minutes, turning every 3–4 minutes, until the meat is cooked through and nicely browned.

Grill the pineapple rings for 2–3 minutes on each side until grill marks appear. Serve the shashlik with grilled pineapple and peach salsa. Enjoy and Happy Father’s Day!
