Ingredients:

  • 2 chicken breast fillets
  • 100 g lingonberries
  • 1–2 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1–2 cloves garlic
  • 5–6 fresh sage leaves
  • ½ teaspoon salt
  • a pinch of ground black pepper

Preparation:

  1. Place the lingonberries in a bowl and mash them slightly with a fork to release their juice. Stir in honey, lemon juice, olive oil, minced garlic, and chopped sage leaves. Season with salt and pepper.
  2. Lightly pound the chicken breasts to an even thickness. Place them in the marinade and coat well. Cover and leave in the refrigerator for at least 1–2 hours, or even better – overnight.
  3. Heat a pan or grill. Remove the chicken from the marinade and cook for approximately 5–7 minutes on each side, depending on the thickness of the fillet, until nicely browned and fully cooked.
  4. The remaining lingonberry marinade can be briefly heated in a small pot and served as a sauce with the chicken.
