Ingredients
- Apples – 350 g
- Lemon juice – 1 teaspoon
- Carbonated mineral water – 200 ml
- Sugar – to taste
- Vanilla sugar – 8 g
- Flour – 180 g
- Baking powder – 10 g
- Vegetable oil – 3 tablespoons
Important: the weight of the apples is indicated after peeling and removing the seeds. It is best to weigh the apples at this stage.
Preparation
Peel the apples, remove the seeds, and grate finely. Place in a deep bowl.
Sprinkle the apples with lemon juice and mix. This will help keep the apples light in color and add a slight tartness.
Pour in the carbonated mineral water and mix well. It is best to use strongly carbonated, room temperature mineral water.
Add the regular and vanilla sugar. The amount of sugar can be adjusted according to the sweetness and type of apples.

In a separate bowl, mix the flour with the baking powder. Gradually add them to the apple mixture and stir until the batter becomes smooth.
The batter should be quite thick, similar to the consistency of sour cream.
Heat the vegetable oil in a pan.
Use a spoon to place the batter into the pan, forming small pancakes. Cover the pan with a lid and cook over medium heat for about 3–4 minutes until the bottom is nicely browned.
Flip the pancakes and cook for another 2–3 minutes until the other side is also nicely browned.
Place the cooked pancakes on a paper towel to absorb excess oil.
Serve the apple pancakes warm. You can garnish to taste with sour cream, honey, jam, or powdered sugar.
