“I love this recipe because the cucumbers are not too sour, slightly sweet, and very fragrant. Honey gives the marinade a gentle sweetness, while garlic and dill remind you of a true summer taste,” says Greta.

Ingredients

  • 2 kg small cucumbers

  • 1 l water

  • 2 tablespoons salt

  • 2–3 tablespoons honey

  • 100 ml 9% vinegar

  • 5–6 cloves garlic

  • dill heads

  • 1 teaspoon mustard seeds

  • a few black peppercorns

  • a few currant or cherry leaves (optional)

Preparation:

  1. Wash the cucumbers thoroughly. If you want them to remain extra crispy, you can soak them in cold water for 2–3 hours before marinating.
  2. Place dill heads, garlic cloves, mustard seeds, peppercorns, and, if using, currant or cherry leaves into clean jars. Pack the cucumbers tightly.
  3. For the marinade, boil water with salt in a pot. Once the salt dissolves, remove the pot from the heat, stir in the honey, and pour in the vinegar.
  4. Pour the hot marinade over the cucumbers, seal the jars tightly. Store in a cool, dark place once cooled.

“The most important thing in this recipe is not to overdo the honey. It should only provide a gentle sweetness and balance the acidity of the vinegar, not overpower the taste of the cucumbers themselves,” Greta shares the secret of the recipe.
