Tomatoes with apples "2 in 1": winter preservation recipe without vinegar

You will need (for one 3-liter jar):

  • about 2 kg of tomatoes;
  • 3–4 sour apples (Antonovka or other similar apples work great);
  • 2 sweet peppers;
  • 1 hot pepper;
  • garlic – to taste;
  • bay leaves – to taste;
  • black and allspice peppercorns – to taste.
  • For the brine (1 liter of water):
  • 2 tbsp sugar;
  • 1 tbsp salt.

Preparation:

  1. Wash the tomatoes well. If their skin is thicker, gently prick near the stem with a toothpick or pin.
  2. Cut the apples into large slices, the sweet pepper into strips, and the hot pepper into small pieces.
  3. In a sterilized jar, layer the tomatoes, apples, and sweet pepper.
  4. Add the hot pepper, and if you like – add garlic, bay leaves, and peppercorns.
  5. Pour boiling water into the jar and let it stand for 10–15 minutes. Then pour the water into a pot.
  6. Add salt and sugar to the water, bring to a boil, and pour the prepared brine over the jar’s contents again.
  7. Immediately seal the lid tightly, turn the jar upside down, wrap it warmly, and leave it to cool completely.

These tomatoes are fragrant, mildly sweet and sour, and the apples soaked in the brine become a great snack with meat dishes or fried potatoes.
