Ingredients (for 4 people)
For the marinade:
1 garlic clove
8–10 tablespoons olive oil
3 tablespoons lemon juice
3 sprigs fresh mint (optional)
1 hot chili pepper
1–2 teaspoons honey
salt and pepper
For the main:
500 g natural halloumi cheese
Preparation
1. Prepare the aromatic marinade
Peel and crush the garlic. Mix with olive oil and lemon juice.

Wash the mint, dry it, and chop finely. Cut the chili pepper lengthwise, remove the seeds, and finely chop the flesh. Add all of this to the marinade. Season with honey, salt, and pepper.
2. Marinate the cheese
Cut the halloumi horizontally into thicker pieces and generously coat with the marinade.
Let it marinate for at least 30 minutes. The longer the cheese marinates, the more intense the flavor will be.
3. Grill
Place the cheese on heated grill grates or a grill pan and cook for about 4–6 minutes, turning occasionally, until nicely browned and golden.

Important: season halloumi with extra salt, pepper, or herbs only after grilling, as this enhances the flavor better.
Useful tips
The marinade not only adds flavor but also helps the cheese stick less to the grill.
Halloumi tastes best with fresh mint, basil, or oregano.
Pairs well with grilled vegetables, watermelon, salads, or pita bread.
If you want a simpler option, halloumi can just be brushed with olive oil and grilled without marinade – but it is the spices and citrus freshness that give it more character.
