Chef Jolita Tamoševičienė states that curd cheese should become part of the daily diet: “Curd cheese is a valuable source of protein. It contains essential amino acids, i.e., those that the body cannot produce itself, so they must be obtained from food. They are very important for humans because they participate in creating new and repairing damaged cells. Also, curd cheese contains magnesium, potassium, zinc, vitamins A, D, and E. It also has many B vitamins, which, among other things, are responsible for the proper functioning of the nervous and immune systems.”
Can curd cheese ice cream be a healthier choice?
Curd cheese is a valuable product, but many may wonder – can ice cream made from it be considered a healthier alternative to traditional dairy treats?
“The answer partly depends on your choice – for example, peanut butter or cookies will increase the dessert’s calorie content. Although curd cheese is a valuable source of protein, heavily flavoring it with sugar-rich syrups or other sweet additives makes the dessert less healthy,” notes the chef.
If you don’t overdo the additives, this dessert will be much healthier than regular ice cream. It will have fewer calories, carbohydrates, added sugar, and significantly more protein.
“Choose low-fat curd cheese, quality honey, avoid artificial colorings or highly processed additives. If you can’t do without chocolate – better choose good quality dark chocolate rather than milk chocolate. Even better – use almonds, other nuts, or fresh berries reigning on store shelves for flavoring. Still, it is important not to forget that this is a dessert, so as with everything in life, moderation is necessary here,” says the retail network chef J. Tamoševičienė.

Homemade curd cheese ice cream
Servings: 4
Preparation time: 1 hr 10 min (10 min preparation and 1 hr freezing)
Ingredients:
Option 1: 500 g curd cheese, 60 ml honey
Option 2: 500 g curd cheese, 120 ml maple syrup
Additionally (optional): 2 tablespoons peanut butter, cashew nuts, cookie pieces, chocolate pieces, bananas, berries, syrup, a few drops of vanilla extract, jam

Preparation:
- Put curd cheese and honey or maple syrup into a food processor. Blend until the mixture becomes smooth, fluffy, and velvety in texture.
- If desired, mix in chosen additives: peanut butter, nuts, fruits, berries, chocolate, or cookie pieces.
- Pour the prepared mixture into a container or mold suitable for freezing.
- Place in the freezer and freeze for about 1 hour.
- Serve alone or garnish with your favorite syrup, jam, or fresh berries.
