The following violations were identified during the inspection:

  • Critical equipment condition and mold: the external surfaces of the sudden freezing (shock freezing) equipment were completely uncleaned, covered with mold and condensation. The freezer in the kibinai production workshop and three cooling devices in the confectionery workshop were filthy – their sealing rubbers were damaged, fan covers were covered with dust, and the plastic covers of the mixers were cracked and unhygienic.
  • Cross-contamination during food handling: raw materials used in production – kefir, cracklings, grated cheese, and ham – were stored in dirty, circulating supplier boxes, which still had labels of other food products (meat, smoked goods) on them. Margarine was stored directly on wooden transport pallets, and plastic boxes were wrapped in dusty, dirty film.

  • Hygiene violations: in the confectionery workshop, some clean production inventory was stored in boxes directly on the floor, very close to cleaning supplies. Moreover, washed production inventory was placed directly on trash bins.
  • Neglected premises: in the dough preparation workshop, ceiling panels had fallen in two places, and the lower parts of worktables and cabinets were covered in dust. Floors of outdoor and indoor cold storage rooms were uncleaned, the chambers themselves were heavily frosted, and ventilation covers above the baking ovens were dirty.

During the inspection, inspectors also identified violations in the self-control system. It turned out that the daily cleaning work log was not filled out according to the actual work performed – on the day of inspection, entries had already been made for several days ahead. Additionally, the company management’s order on the implementation of self-control did not designate responsible persons.
