“I like soups that don’t require much time but are filling and remind me of home cooking. I often make this one when I want something simple but tasty,” says Marytė.
Leek and Potato Soup with Smoked Sausages
Ingredients:
- 2–3 leeks;
- 5–6 potatoes;
- 2 carrots;
- 1 onion;
- 2–3 smoked sausages;
- 2 tablespoons of oil or butter;
- about 1.5–2 liters of water or broth;
- salt;
- ground black pepper;
- bay leaf;
- a little greenery (parsley or dill).
Preparation:
- Finely chop the onion, grate the carrots, and slice the leeks into rings. Heat oil or butter in a pot, sauté the onion with the carrots until the vegetables soften.
- Then add the leeks, sauté for a few more minutes, and pour in the water or broth. Add the potatoes cut into cubes, throw in the bay leaf, season with salt and pepper. Cook until the potatoes are soft.
- Slice the smoked sausages into rings and add them to the soup about 10 minutes before the end of cooking. Season the finished soup with fresh herbs.
Marytė advises letting the soup sit for a few minutes before serving – this allows the flavors to meld even more. It can be served with fresh bread or a toasted bun.
