One of them is the lazy cake. Representatives of the “Rimi” retail chain say in a press release that today it is increasingly made differently: instead of the usual additives, Lithuanians choose curd cheese curds, which give the dessert a creamier texture and richer flavor.

“We notice an interesting trend – people increasingly want not fancy desserts, but those that can be quickly made from familiar products. The lazy cake here becomes almost a universal choice: filling, tasty, and inexpensive, as it does not require many ingredients. Curd cheese curds give this dessert a more modern taste, but at the same time maintain that nostalgic feeling that many are looking for today,” says public relations manager Luka Lesauskaitė.

Can the lazy cake go out of fashion?

Although new trendy desserts appear every year, the lazy cake remains almost unshakable in Lithuania. Its popularity is determined not only by taste but also by the fact that this dessert was created from the start as a cheap, quick, and accessible choice for everyone.

Interestingly, the Lithuanian lazy cake appeared completely by accident. It is believed that the recipe was created in Kaunas around 1967 when too much sugar was accidentally added to a chocolate dessert mixture. To avoid throwing the mixture away, crushed biscuits were added – thus one of the most famous Lithuanian desserts was born.

Even more interesting is that the lazy cake has international “relatives.” In food history, it is often compared to the Australian dessert “Rocky Road,” which was made from chocolate, biscuits, and various additives. Some sources consider it the predecessor of the Lithuanian lazy cake.

Increasingly, the lazy cake becomes “comfort food” for people – a familiar dish evoking nostalgia. The lazy cake here becomes almost an ideal example: it requires neither an oven nor expensive ingredients, and the recipe easily adapts to different times. Today some flavor it with pistachio cream, others with curd cheese curds or dark chocolate, but the main idea remains the same – a tasty dessert at a low cost. For the lazy cake with curd cheese curds you will need:

  • 300 g classic biscuits
  • 3 curd cheese curds of your favorite flavor
  • 100 g butter
  • 1 can of sweetened condensed milk
  • 2 tablespoons cocoa

How to make it?

  1. Break the biscuits into small pieces. Melt the butter in a pot, pour in the sweetened condensed milk, and add the cocoa. Mix everything well until smooth and let it cool slightly.
  2. Add the chopped curd cheese curds to the cooled melted chocolate and mix well until you get a smooth creamy mass. Then add the biscuits and, if desired, chopped nuts.
  3. Put the resulting mixture into a mold lined with cling film, press down, and keep in the refrigerator for at least 3–4 hours. Cut the set lazy cake into slices. Enjoy!
