Preparation:

  1. Peel the onions and cut into thin half-rings. Heat oil with butter in a pan, add onions and cook over low heat, stirring occasionally, for about 20–25 minutes until they soften and start to caramelize.
  2. Add sugar, pour in balsamic vinegar, season with salt and pepper. Cook for a few more minutes until the mixture becomes darker and thicker. Serve on toasted bread; if desired, you can add crumbled cheese or fresh herbs on top.

Preparation:

  1. Mix soy sauce with honey, oil, minced garlic, grated ginger, and pepper.
  2. Brush the salmon fillets with the marinade and leave to marinate for at least 15–20 minutes.
  3. Prepare rice noodles according to the instructions. Drain and mix with thinly sliced carrot, cucumber, soy sauce, sesame oil, and a bit of lemon juice.
  4. Grill the salmon on well-heated grates for 4–5 minutes on each side until the fish is nicely browned but still juicy inside.
  5. Serve the salmon fillets with the rice noodle garnish, sprinkle with chives, sesame seeds, and if desired, drizzle with lemon juice.

Preparation:

  2. Season the salmon with salt and pepper, fry in a pan with a splash of oil for 3–4 minutes on each side. Set aside and lightly chop into pieces.
  3. In the same pan, briefly sauté minced garlic, pour in cream, add lemon juice, grate lemon zest. If needed, add some pasta water.
  4. Add spinach and wait until it softens. Then mix in pasta and salmon. Serve immediately; if desired, season additionally with black pepper or grated cheese.
